'Nude' beetroot & carrot salad
This 'nude' (read no cooking required) beetroot and carrot salad with apple curry dressing has become a regular guest at our dinner table, not just because of its delicious taste but also due to the fact that I have fresh, homegrown beetroot available to use.
It is a meal initself, with the sunflower seeds providing protein and heart healthy fats. This salad is also antioxidant rich and low in calories. I also team it up with a steak barbecued and some fresh mesculun lettuce.

Beetroot & carrot salad with curry dressing
Salad
1 medium sized beetroot - washed, peeled and grated
2 medium sized carrots - washed, peeled and grated
1 to 2 cups of raisins (depending on taste)
1 cup sunflower seeds
Dressing
1 large Granny Smith apple cut into chunks
1 tablespoon of curry powder
1 clove of garlic
½ to 1 cup of quality olive oil
To make the dressing simply prepare all of the ingredients and then place, except the oil, into a food processor or vitamiser and whizz until a paste forms. Slowly add the oil until the desired consistency is achieved.
To make the salad place all of the prepare ingredients into a bowl, mix with your hands (which will turn a light shade of red from the beetroot dye, which washes off easily) and when thoroughly mixed pour over the dressing and again mix.
