For avocado lovers
Having moved from Victoria to Queensland (yes, I am a ring in!) I am a firm believer that you can never eat too many avocadoes! Combining the light, creamy flavour of the avocado with a rich basil pesto this dish is a vegetarians delight! Yum!
Ingredients:
1 ½ cups of pine nuts or walnuts
1 bunch of basil (large)
2 cloves of garlic
2 tbsp olive oil
½ tsp sea salt
¼ cup Parmesan cheese
1 avocado chopped
pasta
Preparation:
Process together all ingredients except the avocado and the pasta in a food processor until almost smooth, adding more oil if needed.
Cook the pasta according to the instructions, drain. Then toss with the pesto and avocado.
Serves 2
