Fast, easy and delicious - Asian influenced meal covers all bases
Chicken simmered in soy and star anise
I can highly recommend this Asian influenced recipe for being quick and easy to prepare, nearly fat free and absolutely delicious. It is ideal for those occasions when you need an impressive meal on the table fast!
- 1/3 cup of soy sauce
- ¼ cup of Chinese cooking wine or dry sherry
- 2 tablespoons of oyster sauce
- 2 star anise
- 1 cinnamon stick
- 2 tablespoons of brown sugar
- 2 chicken breast fillets
- 1 bunch of bok choy or Chinese greens, trimmed and halved
Place the soy, cooking wine or sherry, oyster sauce, star anise, cinnamon stick and sugar in a frying pan over high heat and bring to the boil. Add the chicken breast and cook for three minutes on each side. Add the greens to the pan and cook for two minutes or until tender.
Place chicken and greens on serving plates and spoon over the pan juices as sauces. Serve with steamed rice.
Serves 2.
